Steamed Lobster

Ingredients
- 1 Live Lobster (500g ~ 1kg)
- Water (~600ml)*
- Beer (~200ml)*
*measurements are based on a 28cm wok

Step 1
✔️ Wash and clean the lobster under running water.
✔️ Ensure that it is thoroughly washed, especially the mouth area, as it will cause a bitter taste.
✔️ Only remove the band holding the lobster claws when you are sure that it is completely dead.

Step 2
✔️ In order to remove the fishy smell of the lobster, pour 600ml of water and 200ml of beer into the steamer and let it boil. (*water to beer ratio is 3:1, the total should fill approximately 2 inches of your steamer)
✔️ When placing the lobster in steamer, allow its stomach to be facing up, so that its tasty juice will not be lost in the process of steaming.
✔️ Close the lid and steam the lobster for 10~15 mins.
