Tofu Kimchi

Basic Ingredients

- 1 block of firm tofu (300g)
- 250g of ripened kimchi
- 1/2 an onion
- 1/4 stalk of spring onion
- Small amount of salt
- Small amount of cooking oil
- 1 tablespoon of sesame oil
- A dash of white sesame seeds
- A dash of black sesame seeds

Kimchi Seasoning Ingredients

- 1 tablespoon of chilli powder
- 3 tablespoons of kimchi sauce
- 1/2 cup of water
- 1 tablespoon of oligosaccharide
- 1/2 tablespoon of minced garlic
- A dash of pepper

Step 1

✔️ Chop the ripened kimchi into bite-sized pieces.
✔️ Chop the onion into thick pieces.
✔️ Slice the spring onions diagonally.

Step 2

✔️ Grease a heated pan with oil.
✔️ Stir-fry the onions for about 2 minutes.
✔️ Add the kimchi and kimchi seasoning ingredients and stir-fry on low to medium heat for 8 minutes.

BB Tip: Add some water when stir-frying your kimchi to achieve a softer texture. Based on your preference, you can also add pork to your stir-fry.

Step 3

✔️ When the moisture in the pan has dried up, add sliced green onions and some sesame oil as a finishing touch.

Step 4

✔️ Add a dash of salt to a pot of boiling water.
✔️ Blanch the tofu for about 2 minutes.
✔️ Slice the tofu into bite-sized pieces.

BB Tip: By blanching the tofu, you can achieve a firmer tofu texture.

Step 5

Styling Tips:
✔️ Place the tofu on one side of the plate, facing the same direction.
✔️ Make sure the stir-fried kimchi does not touch the tofu, so as to get a neater plating.
✔️ Add spring onions on top of the stir-fried kimchi to make it look prettier.
✔️ Sprinkle white sesame seeds on one side of the tofu and black sesame seeds on the other side to get a more colourful plating arrangement.

Step 6

✔️ Sprinkle sesame seeds after plating the tofu and stir-fried kimchi before serving.
