It preserves the original meat flavor and prevents oxidation and moisture loss, making it more tender. It is also easy to keep refrigerated at home.

Chef's Tip !

Before cooking, place it on a kitchen towel to gently remove the blood, then cook it in a pan preheated over high heat. Also, lightly sear the outer surface on both sides. Enjoy the ribs with just wasabi or salt.
